Lent Day 28

The sun was shining today, and the wind felt a little cool…spring is trying so hard to push through and arrive!

The girls and I had a great work out today: Nike Training Club app on my phone. 2 kick-butt mostly lower body 15 minute circuit style work outs. Let’s just say those damn burpees were involved so it wasn’t easy, OK!!??

I planned better for eating today:

Today’s Menu:

Breakfast: I made a melon/banana smoothie with hemp hearts, flax seed, greek yogurt, magnesium and that Uno’s oil stuff (or whatever it’s called…LOL!).

a.m. snack: greek yogurt and saskatoon berries (which are drying out in the freezer…Note to self: Use these in smoothies ASAP!)

Lunch: I made a BLT on very dark rye bread: a ton of lettuce, 1 piece of bacon, 4 slices of tomato and one slice of cheese

p.m. snack: the rest of the tomato!

Supper: Bruce made flax coated cod (which I still don’t like, but eat anyway because fish is good for me…) quinoa and mixed veggies.

I then spoiled myself by making that homemade coconut chocolate pudding from raw young coconut, cocoa & a little agave. I also drank all the coconut water. Opening the coconut and scraping all the coconut out burned more calories than I consumed in my opinion! I didn’t have the handsome hubby to help, so it was tricky!!

Lent Day 27

Friday – Lent Day 24 – the usual. Friday coffee party at work had pretty much nothing I could eat, so I skipped it. I did treat the kids (who had AMAZING report cards) to A&W burgers.

Saturday – Lent Day 25 – Lucas had a birthday party where he had some chips. He said that he hadn’t been very interested in the sweet stuff. I did have a bunch of snacks at ReFind’s 2nd Birthday/Ladies Night. The snacks were two variations of hummus with some veggies and whole grain crackers. I had a couple of the homemade chocolate coconut balls that were there – I’m sure there was no refined sugar in those because Kristin doesn’t eat that stuff either. I did splurge and have a Shamrock cookie from the Cocoa Tree bakery. I’m sure that there was a little bit of sugar there. Not much in one cookie, I’m hoping. Man, I sure wanted to go out and have a drink with everyone afterwards. I decided to just go home instead so that I wouldn’t be tempted! I had already been weak and had the cookie!

Sunday – Lent Day 26 – We all stayed home and stayed out of trouble! LOL! (Well, B had to work, but just daytime). I made the bran flour pancakes again. Everyone (even me) had a tiny bit of syrup on the three pancakes we had. I then made a yummy homemade stew for dinner!

Today, Monday – Lent Day 27

I’ve recently learned that I’ve been counting the days incorrectly. I’ve been counting Sundays. You’re not supposed to count Sundays. It doesn’t matter. We’re still sticking to our plans of no refined sugar, no cable and no alcohol. The cable is disconnected. We’ve been working pretty hard on keeping off the refined sugar. Bruce and I have not had a drink other than the ones we had on Date Night a while ago. I can’t say the same for the kids…LOL! Just kidding!

We (my fellow running buddies) ran 4K at the gym track today in 32 minutes! I felt really good afterwards. I worked out 4 times last week, so getting back into full swing has helped tremendously. Today, Krystal and I have started our Simple Spring Cleanse Challenge! I’m really excited about it. It’s more than Spring cleaning, it’s letting go of all kinds of clutter. Today’s Menu:

Breakfast: my hubby made me a breakfast sandwich (egg, bacon, cheese) on one of those whole wheat thin bagel things.

a.m. snack: a banana

Lunch: left over stew (I didn’t bring much for food today – poor planning…)

p.m. snack: missed this

Supper: tortellini with homemade alfredo sauce with mushrooms. no sugar there, but a lot of fat though! 🙂 I just had one helping, so I’m very ok with that!

Lent Day 22

It’s weigh day again today and I’m so very excited to share the news with you…

Day 1  – 176 lbs

Day 8 – 172 lbs

Day 15 – 172 lbs

Day 22 – 168 lbs

I have lost 8 lbs in 3 weeks! I’m really excited about that! I had not anticipated that at all. 3 more weeks to go, so we’ll see what happens! I’ve been exercising back to my regular daily routine that I had before the Celebrate Life Summit, so that makes me feel better in general too!

Today’s Menu:

Breakfast: left over homemade oatmeal & blueberries

a.m. snack: Greek yogurt & blueberries

Lunch: 1/2 whole wheat pita pocket with a little cheese, chicken breast, lettuce & Frank’s Red Hot sauce

p.m. snack: a banana

Supper: 1/2 sausage & homemade stuffed potato (little cheese & cream cheese in the mashed potato) with Caesar salad

I love this song: Beautiful People – Chris Brown. It’s a great reminder that we are ALL beautiful, no matter what our shape and size. I’m excited about losing weight, but I refuse to obsess about it. I love my body and all it can do! Being able to lift the weights I lift, holding “the plank” for as long as I can and run as far as I can means more to me than any number on the scale. It’s being ALIVE!

Lent Day 20

Today, Bruce cancelled cable. We’d been talking about letting it go before the Lent experiment. Everyone has done so well without it that we just decided to do it. My oldest son didn’t have cable for much of his growing up years and he really didn’t miss out on anything. We love watching movies and play lots on the computer. Now, there’s even Netflix if we really want to watch something. Plus, most shows can be obtained on the internet these days. If we even bother. There isn’t a lot on TV that we like to watch!

It was a busy day – lots of computer issues at work – not a very good batting average for our group this year. I’m a little stumped on how to turn this around…oh well, it’s not really for me to decide anyway. I need to stop worrying…sigh….the day started with me running late and then spilling most of my latte all over the floor by the front door…

Anyway, I am thankful for many things today:

  1. My hubby brought me the first latte for when I got out of the shower. Coffee…That always makes me smile
  2. I got to the gym and worked hard with some of my good friends. Working Out…That always makes me smile
  3. I was able to fix a few computer issues, little things, but important to someone. Being Helpful…That always makes me smile
  4. The snow was melting and I thought of spring today. Spring…That always makes me smile
  5. I stopped in and picked up my daughter’s “new” second hand jeans that I got her to say thank you for helping me this weekend. It made her smile. Giving…that always makes me smile
  6. Talking with Kristen and meeting someone new and interesting in her store. She’s such a great new friend. New Friends…That always makes me smile
  7. Sitting with my gang snuggled together watching a movie after our busy weekend in different directions. Reconnecting…That always makes me smile
  8. Seeing my older son put his arm around and comfort his little brother when he felt sad. Brotherly Love…That always makes me smile
  9. Telling the tale of my BFF’s awesome weekend that her hubby created for her. True Love…That always makes me smile
  10. Breathing in, breathing out. Being Alive…That always makes me smile

Lent Day 14

Yesterday was a snow day! Everyone in our house ended up staying home. We spent the day catching up on things around the house and some time outside digging out! The kids dug tunnels and enjoyed the fresh air too! We ate lots of good food too! I’ve added some recipes to this post!


Breakfast: Since we were all home and had time, we built a big breakfast: poached eggs on rye toast, sausage and a few hashbrowns

a.m. Snack: we all drank plenty of water and got moving!

Lunch: The kids tried the new rice macaroni and cheese that I’d picked up for them to try. They didn’t even notice anything different about it. I had left over chicken breast and spaghetti squash

p.m. Snack: we had about 5 of these crackers that Bruce picked up from Costco – they are wafer thin, you can see the seeds and nuts and grains in there too. They don’t have any sugar – they pretty much are these nuts and things stuck together into a crunchy wafer. We also had homemade hot cocoa that had zero refined sugar too!

Supper:I made a vegetarian chili and fresh guacamole that everyone seemed to love because there wasn’t much left over!


Hot Cocoa

  • Add 1 tsp raw cocoa and 2 tsp agave nectar to your mug
  • Add 1 tsp hot water and stir until smooth
  • Add 1 cup steamed milk

Vegetarian Chili

  • Heat 1 tbsp organic canola oil in your chili pot
  • Add 1 chopped onion, 1 chopped green pepper (or whatever color you have), 2 diced carrots and chili spices (your preference for this!)
  • Stir and cook until onions are clear (about 5 minutes)
  • Add 1 large can of stewed tomatoes, 1 can black beans, 1 can kidney beans (you can really use whatever beans you want – the mixed ones would be good too)
  • Cover and simmer for at least 15 minutes – stir occasionally

Fresh Guacamole

  • Mash 2 ripe avocados in a bowl
  • Add 2 tbsp of Greek yogurt and a splash of lemon juice
  • Add 2 tbsp Epicure Guacamole spice mix – I love this and it’s additive free compared to the ones you buy in the store
  • Stir together and chill for at least 10 minutes (while the chili is cooking!)
